Mparamirundi Hill in Kirundo, Kayanza, Burundi. Don’t let that mouthful scare you away from this lush coffee coming from one of the most renowned processing stations in the world - Cafex. Originally launched by a Belgian-Burundian couple who wanted to bridge the gap between coffee farming, their ancestral lands, sustainability and improving the daily lives of the local people. Ikawa Nziza is responsible for this particular lot of coffee, their partnership with Cafex and what is now Covoya Europe began in 2013, focusing on positively impacting families working in the region by offering coffee farming knowledge, training and not only higher than standard pay, but also schemes to pay employees weekly instead of (what unfortunately is the standard) only after the whole harvest has sold - which sounds great in our book and we’re only happy to support projects like that! Expect vibrant candied ginger notes, some pear drops, and a honey-like sweetness.

More about the process:
Cherries are picked, hand selected, separated from floaters, then pulped, dry-fermented for 14h and all the remaining mucilage is then washed. After that, the seeds are dried on raised beds in the shade, and in full sunlight in the later stages - all of that totals around 20 days. In the meantime coffee is turned around to prevent mouldy growth and any uneven additional fermentation.
Best used for - V60, Aeropress, French press, Mocha pot and Espresso.
